Apple Crisp



It's my first guest post!  Well, it technically might not count because my guest isn't a blogger.  But he did make the recipe and it came from his personal recipe stash, so I didn't feel right passing it off as my own.  Please welcome my Chief Tasting Officer and First Lieutenant in Charge of Sprinkles, Dave!  (Yeah, he's my husband, too, but for this blog, that's not nearly as important a job.)  Dave took complete control of this tasty treat, although we did work together to determine how to adapt it from a microwave version to an oven version.  He didn't even let me take all the photos (but I did highjack the camera at one point because I wanted particular shots).  This makes a sweet and crunchy version of a classic New England treat, featuring local apples and yummy cinnamon.  By baking in the oven rather than microwave, you get a crunchy topping that pairs nicely with the softened apples.




Apple Crisp

Hi, I’m Dave and I’m the guest blogger.

Today we’re going to make apple crisp. It’s easy to make and tastes good: you’ll like it. First, let's gather all of our ingredients. To do that I would suggest you go to your local apple orchard and get some apples. Of course if you don't have an orchard, you can buy them at the store.


Macintosh apples were in season, so that’s what I used. You’ll also need:

Ingredients

6 cups of those apples (~4 to 6)
½ cup flour
1/3 cup brown sugar
1/3 cup quick oats
¼ cup softened butter
½ teaspoon cinnamon
1 bottle beer or hard cider (optional)

Start by opening your beer or hard cider. I would suggest using a coozy to keep it cold.


The beer is for you to drink throughout the process. Now, start peeling the apples and drinking your beer.



After the apples are peeled, core and slice them. I prefer to use a slicer/corer tool like this one:



Put all the apples slices into an 8x8 dish. Put all the cores into the trash/compost/garbage disposal (this might be fun)/backyard.



Sprinkle the apples with cinnamon.



Now we have to make the topping. Put all the flour, brown sugar, oats, cinnamon, and softened butter into a bowl. The butter needs to be soft enough that you can mix it with all the other ingredients.



Mix it all together. I used this smashing/mixing tool (a pastry blender). In the past I used a fork with success, but more effort.



Don’t forget to drink some beer after all that mixing.



Don’t worry about the small chunks of butter. Make sure that it’s well mixed and the butter is evenly dispersed throughout the mix.


Sprinkle the mix all over the apples.


Put it in the oven at 350 degrees F. Bake it until it get crispy and the apples are soft. It took 45 minutes in my convection oven to bake. You can also put this into the microwave and cook it on high for 9-12 minutes This is how I used to do it, but I’m told that’s sacrilege on this blog.  (That is so not true--I just thought it would be better with the crispy edges that you can't get from a microwave.)


There’s some debate about how to serve. I agree with 2 methods: 1. Serve cold 2. Serve warm with vanilla ice cream. I tolerate those who insist of serving it warm. Either way, enjoy.

Makes about 12 servings.
