Lumberjack Cookies


Don't ask me about the name, I just picked these up from someone else's blog.  It is a fun name though.  But if you want a description, these are a soft molasses cookie that perfectly fit into the fall and holiday flavors.  They are certainly meant to be devoured and if I would have let him, Dave would have done just that.  These cookies are so good, that they actually have me contemplating not making my regular Gingerbread cookies this year.  Why compete with such a perfect alternative cookie?  I know there's the whole shapes and decorating thing...I'll think about it.

Jen over at Beantown Baker got this recipe from her mother-in-law and I can see why they are a family favorite.  Just a simple cookie, easy to put together and they bake up soft and delicious.  I wouldn't change anything, they are perfect as is.  They'd be a great cookie for kids to make for Santa or holiday parties if you want to get little hands involved and they freeze well, either before or after baking.



Lumberjack Cookies


Ingredients

1 1/4 cup sugar, divided
1 cup shortening
1 cup dark molasses
2 eggs
4 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger

In a large mixing bowl, cream shortening and 1 cup sugar until light and fluffy, using a beater attachment.  Add molasses and eggs and mix well.



Sift together flour, baking soda, salt, cinnamon and ginger.  Switch to a paddle attachment and gradually add flour mixture to creamed mixture and mix to combine.


Put remaining 1/4 cup sugar in a small bowl.  Using a small cookie scoop, scoop dough into hands, roll into a ball and then roll in sugar.



Arrange balls on a parchment or Silpat lined cookie sheet.



Bake at 350 degrees F for 12-15 minutes.  Turn baking sheet 180 degrees halfway through baking. If using more than one sheet at a time, rotate positions in the oven for more even baking.



Remove from oven and cool on pans for 1-2 minutes before removing to cool completely on wire racks.



Makes 6 1/2 dozen cookies.
