Funfetti Cut-Out Cookies


Now how fun and festive are these?  And besides being awesome due to sprinkles, they taste like cake.  Because they are made with a cake mix.  Hey, if you're going to make as many cookies as I do, sometimes you need to praise small favors that come in the form of a prepackaged mix.  The cookies are soft and full of cakey flavor, speckled with fun holiday sprinkles.  Rolled out into whatever shapes you like, these cookies are perfect for the holidays or can be customized for any celebration.

It was a tough decision to not make my traditional sugar cut-outs but these cookies just seemed like so much fun.  The recipe comes from Goodness Gracious, but I found it on Pinterest (of course).  I opted for a white cake mix because I wanted my sprinkles, a holiday assortment including trees and snowflakes, to pop.  I didn't count on the red sprinkles bleeding into my batter (just a touch in one area), but I think that's because my sprinkles were a bit old mature.  In any case, you could sub a yellow cake mix and rainbow sprinkles, or whatever combination strikes your fancy.  After rolling, I chilled the cut cookies to help them maintain their shape as they baked up, and it kept them from getting over browned in the oven.  Have fun with these--they'll make a pretty addition to Santa's plate.

Funfetti Cut-Out Cookies


Ingredients

1 18.25 ounce boxed cake mix
2 eggs
1/2 cup butter, softened
1 teaspoon vanilla
1 cup sprinkles
sanding sugar for sprinkling

In the bowl of a stand mixer or a large bowl with a hand held mixer, cream butter, scraping sides of bowl as needed.  Add eggs and vanilla and mix well.


Gradually add the cake mix and stir to combine.


Stir in sprinkles to incorporate throughout.


Cover and chill for two hours.  When ready, roll out on a lightly floured surface to 1/4 inch thickness.  Cut with desired cutters and arrange on pans about an inch apart.  Sprinkle with sanding sugar and chill on pans for 5-10 minutes.





Bake at 350 degrees F for 10-12 minutes or until set and the bottoms just begin to turn golden.  Turn baking sheet 180 degrees halfway through. If using more than one sheet at a time, rotate positions in the oven for more even baking.


Remove from oven and let cool on pan for 2-3 minutes before removing to wire racks to cool completely.

Makes between 4-5 dozen, depending on size of cutters.
