Pork Burritos


Did you make pork for dinner last night as a nod for good luck in the New Year?  Maybe you roasted up a big beautiful pork loin.  Or maybe you went simple and fun and tried the Crock Pot Pulled Pork I posted last week.  Either way, I'll bet you have leftovers.  And here I am to share a new way to enjoy those leftovers so you don't feel like you're eating that same thing.  Shred it and wrap it up in a tortilla with rice, beans, cheese and veggies for a simple but delicious burrito that will have everyone in your house asking for more leftovers.  Great flavor, lots of different stuff to make this rival the restaurant burritos.  Even Dave said it was on par with some of his favorites from college.

From the same Melissa d'Arabian recipe in the September 2012 Food Network Magazine as the Pulled Pork I made last week, this is one of the 10 options Melissa shares to use your shredded pork in new and creative ways.  I left out the chopped tomatoes since I didn't have any in the house, but I loved that overall, this is very much a recipe made with your pantry staples.  Load it full of your favorite rice, beans, cheese, salsa, guacamole, onions, tomatoes, sauces, sour cream, and any other of your favorite fixings and you'll have a tasty dish.  Serve with chips and salsa, and enjoy a new take on leftover night.

Pork Burritos


Ingredients (quantities can be adjusted to taste)


1 15 ounce can black beans
4 flour tortillas
1 cup white rice, cooked and warm
1/2 cup shredded Mexican cheese blend
6 ounces (about 1 1/2 cups) shredded pork, warmed
1/4 cup shredded lettuce
1/2 cup salsa
sour cream, to taste

Drain and rinse black beans.  Transfer to a small pot and cook over medium heat until warmed through, stirring and smashing slightly with a spatula or the back of a spoon.


Warm tortillas according to package instructions.  Line up ingredients and assemble your burritos.  Layer 1/4 cup of beans down the center of a tortilla and a 1/4 cup of rice along side the beans.


Top with 2 Tablespoons of cheese, then top with 1 1/2 ounces (about a heaping 1/4 cup) shredded pork. 


Sprinkle 1 Tablespoons shredded lettuce and 2 Tablespoons salsa over pork, then top with desired amount of sour cream.  Fold up into a burrito and enjoy with chips and more salsa.



Makes 4 burritos.
