Funfetti Fudge


Happy Birthday to me!  Dave is pretty handy in the kitchen, but much as I love him I've never gotten a birthday baked good or special treat from him. I think he might be afraid. Which is perfectly fine.  But this year I decided I wanted to make my own birthday treat and when I spied this yummy little nugget, I knew this is what I wanted for my birthday goody.  A smooth fudge with lots of birthday cake flavor with oodles of sprinkles throughout.  This fudge was so simple, I think it will become a birthday staple, for me and everyone else.  I'm not sure I've made anything else that is so delicious and so very easy to make.  Why wouldn't I make it all the time?  I mean, it's gotta be someone's birthday.

In my pin-everything-cake-batter-flavored phase, I found this recipe on Pinterest and needed to make it.  Originally from Baked from a Box, I can't get over how simple this 5 ingredient fudge is that yields such an amazing treat.  One bowl, a microwave and a spatula and in about 5 minutes, you've got a perfect treat in the fridge waiting to set up, get cut into squares and gobbled up.  Lacking a 6 x 6 inch container, I used my standard 8 x 4 loaf pan lined with parchment and it turned out perfect.  Maybe Dave will surprise me with a birthday treat when I get home, but if not, I know I'll be enjoying this for my dessert tonight!

Funfetti Fudge


Ingredients

1 cup yellow cake mix
1 cup powdered sugar
1/4 cup butter, cut into chunks
1/4 cup milk
1/2 cup sprinkles

In a medium, microwave safe bowl, whisk together cake mix and powdered sugar.


Add butter and milk, but do not mix.  Cover and microwave on high for 2 minutes.


Stir immediately to incorporate all the ingredients, then add sprinkles and stir to combine.  Note: Take care not to overstir or coloring from sprinkles may bleed.



Turn mixture into a parchment lined 8 x 4 loaf pan and spread to an even layer.  Chill for 1 hour.


Remove from fridge and lift out onto a cutting board.  Peel off the parchment and cut into 1 inch squares.



Makes 32 squares.

  1. This looks amazing. I think I'm going to base Super Bowl festivities fudge off of this recipe. I guess that means we'll be sheering for the ravens, because purple and chocolate sprinkles will probably be easier to find than maroon-ish and gold.
