Banana Bread Pancakes


Yeah. Pancakes. That taste like banana bread.  Mmm, my tummy grumbles and mouth waters just thinking about them. Lots of banana goodness and baked bread spices like cinnamon and nutmeg, these pancakes are so good and so easy to make, you'll wonder why you even made ordinary plain pancakes.  For a little extra oomph, you could toss in some chopped nuts, chocolate chips or some other extra tastiness, but these certainly are delicious enough to enjoy just as they are.  Dave and I scuffled over the leftovers that I packaged up in the freezer.  And now that they are all gone, I'll need to whip up another batch soon.

When I want unique pancake ideas, I turn to Pinterest, which is where I found this recipe from Six Sisters' Stuff.  I'm not sure which of the ladies posted this recipe, but I love it.  Quick to whip up and full of flavor, these pancakes made a perfect lazy weekend breakfast for Dave and I.  Since I had whole wheat pastry flour, I used that, but all purpose flour will do the trick as well.  I added a bit of baking spice, and then increased the milk because the batter was very thick and wouldn't pour.  Not wanting to end up with banana bread biscuits, the additional milk thinned the batter and the end result was perfect fluffy and delicious pancakes.

Banana Bread Pancakes


Ingredients

2 cups whole wheat pastry flour
1/4 cup brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking spice
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 1/2 cups milk
1 Tablespoon vanilla extract
3 large ripe bananas, mashed
2 Tablespoons butter, melted

In a medium bowl, whisk together flour, brown sugar, baking powder, cinnamon, baking spice, nutmeg and salt.


Combine milk and vanilla, then stir into flour mixture.


Stir in mashed bananas, then melted butter, until combined and smooth.



Heat griddle over medium-high heat and spray with cooking spray.  Pour batter onto hot griddle and cook for 2-3 minutes until bubbles form on top and edges are gently set.


Carefully turn and cook on other side for another minute or so.


Remove from griddle and repeat with remaining batter.  Hold cooked pancakes in a 200 degree F oven until all are cooked.


Serve with syrup and fruit.

Makes 18 pancakes.
