Beer and Bacon Pancakes


Father's Day is on Sunday and if I didn't live so far from my Dad, I would totally be making him these pancakes for breakfast.  Pure, unadulterated man food, these pancakes have both beer and bacon right in them.  What's more to love?  And what other dish is quintessentially the perfect man's breakfast?   Dave and I loved these and they were super simple to make.  Candied bacon and Yuengling lager (or some other beer with a bit of flavor) put a new, manly spin on pancakes.

This recipe is from Betty Crocker and is super simple, using just a few ingredients, including a prepackaged baking mix.  If you prefer, you can use your favorite plain pancake recipe and just stir in the beer for the wet ingredients and add the bacon as a mix-in.  A drizzle of maple syrup on top gives these pancakes a bit of extra sweetness to the salty-sweet bacon and whatever kind of flavor your beer brings to the dish.  So say Happy Father's Day to the special man in your life with a perfect breakfast this Sunday, or any special day.

Beer and Bacon Pancakes


Ingredients

1/2 pound bacon
1/3 cup brown sugar
2 cups baking mix
1 cup beer of choice 
2 eggs

Line a baking sheet with aluminum foil, the place a wire cooling rack on pan.  Spread out bacon in a single layer on wire rack and sprinkle about half of the brown sugar over the bacon.


Bake at 350 degrees for 15 minutes, then remove from oven and turn carefully.  Sprinkle remaining brown sugar over the bacon and return to oven to bake for another 15 minutes or until crispy.  Remove from oven and let cool.



While bacon cools, measure baking mix into a medium bowl.  Add beer and eggs, stirring or whisking until batter forms.  If batter is too thick, gradually add more beer to thin out.


Chop cooled bacon into small chunks, then add to batter and stir gently to distribute.


Heat griddle or skillet over medium high heat and spray with cooking spray.  Pour about 1/3 cup of batter onto hot griddle.


Cook until edges are set and tops begin to bubble, about 2 minutes.  Carefully flip and cook other side for about another minute.


Repeat with remaining batter.  Hold cooked pancakes in a 200 degree F oven until all are cooked.


Serve with maple syrup.

Makes about 18 pancakes.
