S'mores Waffles


Do I really need to say it twice?  It's a campfire breakfast (and it's dessert for breakfast--my personal favorite) without the campfire.  Regular waffles are kicked up a few degrees with chocolate, graham cracker and marshmallows for a new twist on waffles and a new delivery method for a favorite summer dessert.  Dave and I both enjoyed a few of these waffles on a Sunday morning and I'm so glad I felt a need to make waffles.  These are such a fun flavor and a perfect for lazy summer breakfasts.

I hadn't made waffles in a while, but I wanted to make something a little fun.  so off to Pinterest where I spied these S'mores Waffles from Sugar and Spice in the land of Balls and Sticks. Marcia made them gluten free, so I didn't have a lot of the ingredients on hand to make them just as she did.  So I improvised, using her amount of mix-ins and stirring them into my go-to waffle recipe from the Better Homes and Gardens New Cook Book.  Dave got this book when he first moved out on his own, and I've used many times to find simple recipes or look up techniques and suggestions.  Between these two recipes, I thought these waffles turned out perfect for summer--a little sweet but still a hearty breakfast.  Serve with maple syrup or a drizzle of chocolate sauce and you've got a campfire breakfast without the campfire.


S'mores Waffles


Ingredients

1 3/4 cup flour
1 Tablespoon baking powder
1/4 teaspoon salt
2 egg yolks
1 3/4 cups milk
1/2 cup canola or vegetable oil
2 egg whites
2/3 cup mini marshmallows
2/3 cup crushed graham crackers (about 5 sheets)
1/2 cup mini chocolate chips

In a medium bowl, whisk together flour, baking powder, and salt.


In another medium bowl, beat egg yolks slightly, then add milk and oil and stir.  Pour milk mixture into flour mixture and stir just until combined.

 


Beat egg whites until frothy then gently fold into batter.  Fold in marshmallows, graham crackers and chocolate chips just enough to distribute throughout the batter.



Heat a waffle iron as desired and spray with cooking spray.  Pour abut 1/2 cup of batter on the iron and cook according to waffle iron directions.



Place cooked waffles on a baking sheet in a 200 degree F oven while making the rest of the waffles.


Makes 8-10 waffles.
