Banana Cream Pie Krispies Treats


So, you probably noticed that I don't really make pie.  I mean I made it once but it was a lot of work and I just haven't found another pie worthy of me busting out the rolling pin.  But you know I can get behind some krispies treats.  So these treats that mimic banana cream pie are delicious.  Banana cream pie flavor and chunks of pie crust mixed into a regular krispie bars.  Topped with a bit of whipped cream, these bars are perfect combination bringing the taste of pie to a simple to make bar treat.
I love this recipe.  It's unique and the addition of actual pie crust is a little unexpected.  I can see other variations, like chocolate cream or pumpkin versions.  But I digress.  The recipe is from Dorothy of Crazy for Crust, who definitely knows her way around a pie.  I'm so glad she shared this and I will definitely make these again.  I didn't change anything in the recipe itself, but I did use the sugar-free variety of pudding mix.  You can certainly use the regular version like Dorothy did and get great results.  I also opted to melt my butter and marshmallows on the stove top rather than in the microwave, but whatever your preferred cereal bar making method will be fine.  Topped with whipped cream, or just plain, these krispies treats are a fun variation on the traditional, and might even be a quick and satisfying substitute for whipping up a pie.

Banana Cream Pie Krispies Treats


Ingredients

1 frozen pie crust
4 cups crisp rice cereal
10.5 ounces mini marshmallows
1/4 cup butter
.9 ounce box sugar free or 3.4 ounce box regular banana cream pie pudding mix

Bake frozen pie crust according to package directions for blind baking (usually includes slightly thawing the crust, pricking with a fork and baking for around 10-15 minutes).  Allow to cool completely.



Measure cereal into a large bowl, then crumble cooled pie crust and mix with cereal.


In a medium saucepan, melt butter and marshmallows over medium heat until smooth.  Stir in pudding mix to combine.



Remove marshmallow mixture and pour over cereal/crust mixture.  Working quickly, stir to coat completely.


Turn coated cereal mixture into a lightly greased 9 x 13 inch pan and gently press into an even layer.


Allow to cool completely before cutting into bars.

Makes 24 bars.
