Oreo Chocolate Chip Cheesecake Bars
Let me just break this down for you. Chocolate chip cookies. With chunks of Oreos. Pressed into a pan and topped with cheesecake filling. Topped with more cookie dough. Drizzled with white and dark chocolate. Heaven just seems like an understatement when it comes to describing these bars. Seriously, what more could you possibly want? The cookie is soft but has a crunchy exterior providing a perfect crust to the creamy cheesecake filling, and topping it with more goodies just seems right. They are a fairly impressive bar and perfect for a party, work treat, celebrating a day that ends in "y," just about anything. Oreos are my favorite store bought cookie and I love a good bar with some sort of creaminess to it, so the cheesecake filling is a great addition. These were a big hit when our friends were over and more than a few were requested in the doggy bags.
I'd found a recipe for a chocolate chip cheesecake bar, but the reviews indicated the cheesecake part was super sweet. So I hunted a little more and then saw this version that was even more awesome due to the inclusion of Oreos and chocolate topping. Jocelyn at Inside BruCrew Life might be something of a genius here because I am hooked. I opted for Double Stuf Oreos and used milk chocolate chips for the topping because I'm a rebel. And I ended up using the last of the dark chocolate chips in the batter, so I needed something else to pinch hit. It worked and these bars are awesome. Definitely will be made again in this house!
Oreo Chocolate Chip Cheesecake Bars
Ingredients
1 cup butter
1 cup brown sugar
1 cup sugar, divided
3 eggs
3 teaspoons vanilla extract, divided
2 3/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups Double Stuf Oreo cookie chunks (about 10 cookies)
1 cup dark chocolate chips
8 ounces cream cheese, softened
1/4 cup white chocolate chips
1/4 cup milk chocolate chips
1/4 cup Oreo cookie crumbs (about 2-3 cookies, crushed fine)
In the bowl of stand mixer fitted with a paddle attachment, or a large bowl with a hand held mixer, beat butter, brown sugar and 1/2 cup sugar until light and fluffy. Add two eggs, one at a time, and 2 teaspoons vanilla, beating after each addition until combined.
Whisk together flour, baking soda and salt. Gradually add to creamed mixture, stirring to incorporate.
Fold in Oreo chunks and dark chocolate chips.
Lightly grease a 9 x 13 inch baking pan and press about half of the cookie dough into the pan in an even layer.
If you only have one mixing bowl for your stand mixer, transfer remaining cookie dough to another bowl and set aside, then clean and dry. Otherwise, using another bowl for the stand mixer, beat cream cheese and remaining 1/2 cup sugar, using the whisk attachment, until creamy. Add remaining egg and vanilla and continue to beat until incorporated and smooth.
Pour cream cheese filling on top of cookie dough in pan.
Crumble remaining cookie dough over filling and distribute all over.
Bake at 350 degrees F for 30 minutes. Remove from oven and allow to cool on wire rack to room temperature, then transfer to refrigerator to chill completely. Cut into bars.
Once chilled, melt white chocolate chips and milk chocolate chip separately in the microwave in 30 second intervals. Transfer each to a zip top bag and cut the tip off of each bag. Drizzle all over chilled bars.
Before chocolate sets, sprinkle finely crushed Oreos on top of bars. Allow to set, storing in refrigerator, and gently cut through chocolate drizzle to serve.
Makes 24 bars.
