Campfire Cookies


Well, the weather is starting to turn and there are few weekends left for comfortable camping, the best part of which is gathering around the campfire to toast marshmallows and make s'mores.  You know I love those marshmallow treats coupled with graham crackers and chocolate, and these cookies are a nod to that essential summer snack.  A chocolatey cookie stuffed with marshmallow bits and crushed graham crackers, these cookies a nice way to enjoy these last few days of summer before fall officially sets in later this month.  And of course they're a simple recipe because these cookies start with my master cookie mix.

I've been eying this recipe from 1 Master Mix, 51 Cookies for a little while and am glad I finally got around to making them.  I swapped regular miniature marshmallows to the dehydrated marshmallow bits because I didn't want the marshmallows melting out of the cookie completely.  I also used crushed graham crackers in lieu of Golden Grahams cereal since that's what I had on hand, plus I though the size of the cereal squares would be too large for the cookies and wouldn't hold together very will.  I definitely think these were the right moves since the cookies still had marshmallow flavor in every bite to balance the cocoa in the base of the cookie and the chunks (and crumbs) of graham cracker strewn throughout.  These are a great after school snack or would make a good option for bake sales, either bundle together or baked up as a larger cookie.  If you don't have a campfire to cozy up to, enjoy these cookies as a linger taste of summer.

Campfire Cookies


except use these, not the mini marshmallows shown above

Ingredients

1 3/4 cups master cookie mix
1/2 cup cocoa powder
1/2 cup shortening
1 egg
2 Tablespoons milk
1 teaspoon vanilla
3/4 cup marshmallow bits
1/2 cup crushed graham crackers

In a large bowl, combine flour and cocoa powder.  Then add shortening and using either a pastry blender or two forks, cut shortening into the mix until the mixture resembles coarse crumbs.


Add egg and stir with a spatula or spoon to combine, then add milk and vanilla, continuing to stir until a dough forms.   Stir in marshmallow bits and graham crackers.


Drop dough onto parchment or silpat lined cookie sheets (Note: I used a small cookie scoop).


Bake at 375 degrees F for 7-9 minutes until set.  Turn baking sheet 180 degrees halfway through. If using more than one sheet at a time, rotate positions in the oven for more even baking. 


Remove from oven and cool on pan for 5 minutes before transferring to wire racks to cool completely.

Makes 3 dozen cookies.
