Cheeseburger Meatloaf


I love a twist on a recipe standard.  Like meatloaf. It can be dressed up in so many ways (like this one or even this one).  And this recipe is yet another way of proving, you don't need to make your grandmother's meatloaf (unless her recipe is fantastic, then definitely make it).  But if your standard meatloaf leaves you wanting more, try this variation to turn your meatloaf into a cheeseburger dinner, without the bun.  Ground beef is doctored up with ketchup, mustard, onion and burger season, then stuffed with cheese, only to have more cheese melted over top for a delicious dinner and a new way to make meatloaf.

As soon as I saw this recipe from Todd and Lindsay, I knew I needed to make it.  I've made it a few times actually.  The first time I thought it needed a little something extra--some seasoning to really highlight a burger flavor.  Enter Magic Burger Dust.  I added a bit of that (any grill seasoning would likely work) and this dish really hit the mark in terms of mimicking a burger.  I subbed shredded cheddar for American cheese, which I think had the perfect melting point to be gooey but not runny.  Excellent choice and a brand new way to enjoy meatloaf.

Cheeseburger Meatloaf


Ingredients

1 pound ground beef
1/2 cup ketchup
1/4 cup bread crumbs (I used ground Fiber One cereal)
1/4 cup chopped onion
1 egg
1 Tablespoon Magic Burger Dust
2 teaspoons mustard

1 cup shredded cheddar

In a medium bowl, combine meat, ketchup, bread crumbs, onion, egg, burger dust, and mustard. Mix until combined, taking care not to mix too much and render the meat tough. 



Turn meat out onto a long piece of waxed paper (about 12-15 inches).  Press meat into an even layer, about 8-9 inches square.



Sprinkle about 3/4 cup cheese onto meat.  Then, using the waxed paper as a guide, roll meatloaf into a spiral, removing the waxed paper as you go.



Carefully transfer to a lightly greased 9 x 5 loaf pan, using a wide spatula and the waxed paper to help with the transfer.


Bake at 350 degrees F for 45-50 minutes until meat is mostly cooked through.  Sprinkle remaining cheese over top of meatloaf and return to over for 2-5 minutes until melted and meat is cooked.



Makes about 4 servings.
