Rolo Stuffed Chocolate Muffins

Well, color me mortified. Seriously, I don't have a recipe for the crow I'm currently eating. After writing up the post below and completely enjoying my April Foodie Pen Pal, Ashley, my diminished computer skills (i.e.: my ability to remember to hit the publish button) followed by an illness that kept me either in bed or lying on the bathroom floor, thus away from blog maintenance meant I missed Wednesday's Foodie Pen Pal reveal day.  And for this, I'm sorry. Please take a look below at the wonderful box I received from Ashley at Happy, Pretty, Sweet and these fun muffins I sent her. I'm so sorry if you felt neglected, Ashley! Meanwhile, I'm going to see if I have any ketchup to choke down this crow.


I could quite literally eat chocolate all day. Breakfast, lunch and dinner. Except I do need actual nutrition. So I make real food and enjoy that. But if I can make chocolate flavored real food, then that's a major score. Of course that means I love these muffins. Delicious, tender, chocolatey muffins with a surprise inside of slightly gooey caramel thanks to Rolo minis. Perfect for breakfast or a lovely afternoon snack. And definitely perfect for a chocoholic, like me. And my Foodie Pen Pal.

The Lean Green Bean
It's the end of the month, so time to share the treats I received from Ashley, my Foodie Pen Pal for this month. It's a great way to try new things and meet new people. Ashley from Happy, Pretty, Sweet. And she's awesome. I adored poking through her blog. She's a perfect foodie pen pal because she loves surprise packages. I love that she crochets (like me) and bakes so she doesn't kill people (which is actually an accurate description of me I never thought of before). As a self-described chocoholic, I knew I needed to send her some chocolate treats. Go check out her blog to see all the goodies I sent in addition to these muffins. In return, I received an excellent package of mint and dark chocolate, a cherry pie Lara Bar, Hello Panda cookies (that Dave devoured) and a homemade mix for blondies that I can't wait to try. Thanks so much for a great package, Ashley!

This recipe comes from Catherine, posted at Lori's Recipe Girl and I love everything about it. Chocolatey muffins with a great texture and simple, common ingredients. All I did was pop in a couple mini Rolos for extra chocolate and a smooth caramel center. Yum! I wish I would have pushed the Rolos down a bit more so the batter would have baked over the candy a little better. Or put in half the batter, then the Rolo, then the rest of the batter. Don't get me wrong, these are still delicious. Now I'm just being picky about aesthetics. So it is in my kitchen!

Rolo Stuffed Chocolate Muffins


Ingredients

1 1/2 cups flour
1/2 cup unsweetened cocoa powder
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup vegetable oil
24 mini Rolos

Sift flour, cocoa powder, sugar, baking powder and salt in to a medium bowl.



In a separate medium bowl, beat egg. Whisk in milk and oil until combined.


Add flour mixture to egg mixture and stir until just combined.


Lightly grease a muffin pan and divide batter among the muffin wells.


Carefully push two Rolos into the center of each muffin.


Bake at 400 degrees F for 20 minutes or until tops are set and a tester insert to the side of the Rolos comes out clean.


Remove from oven and cool in pan for 3-5 minutes, then transfer to wire racks to cool completely.


Makes 12 muffins.
