Peanut Butter Pretzel Rice Krispies Treats

 




So there's these little nugget-like pretzels filled with peanut butter that are a sneaky little addictive snack. You can get them just about anywhere and all the brands I've had are good. It wasn't until I started eating these by the handful that I realized how peanut butter and pretzels make an excellent combination. Of course, when you toss both of them into some krispies treats you really can't go wrong. Crunchy, sweet, and salty, these krispies treats are delicious and topped with just a smattering of chocolate, they really are perfect for summer cookouts, pot lucks and general no-bake goodies.


With a group training at work coming up, I decided a treat was in order and settled on these krispies treats from Shelly at Cookies and Cups. They were easy to whip up after work one night, all the ingredients were pantry staples (because everything I need to krispies treats is always in my pantry anyway), and perfect to transport right in the pan. I stayed fairly true to Shelly's recipe, although I did use a 9 x 13 inch pan since I like my treats a little thinner (plus you get more squares to share that way). I also mix my marshmallow goo into the dry ingredients rather than the reverse because I think I get better distribution and it's easier for me to stir. The chocolate drizzle is optional, but do yourself a favor and don't skip it. Make these this weekend (or tonight) for perfect treat and realize that peanut butter and pretzels belong together.

Peanut Butter Pretzel Rice Krispies Treats


Ingredients

4 cups crisp rice cereal
2 cups pretzels, coarsely chopped or crushed
1/4 cup butter
10 ounces mini marshmallows
1/2 cup peanut butter
1/2 cup chocolate chips

In a large bowl, mix together cereal and chopped pretzels. Set aside. Note: To crush pretzels, you can toss about 2 1/2 cups whole pretzels into a zip top bag and place on top of flexible cutting mat. Tap a few times with a meat mallet or rolling pin until you get the desired pieces.



In a medium pan, melt the butter and marshmallows over medium low heat, stirring. Add the peanut butter, continuing to stir, until combined and mixture is smooth.



Remove from heat and pour over cereal mixture.


Working quickly, stir until evenly coated.


Turn mixture out into a lightly greased 9 x 13 inch pan. Press to an evenly layer. While mixture cools, place chocolate chips in a zip top bag and microwave in 15-30 second increments until melted. Snip off a corner of the bag and drizzle on top of bars.



Allow chocolate to set before cutting.

Makes 24 bars.
