S'mores Krispies Treats


A few months ago, I posted the Vanilla Cookie Krispies Treats. When I shared them with Rachel and John, I mentioned I was toying with some ideas for S'mores Krispies and the first thing Rachel said was, "So you're making those next right?" Guess I had my marching orders! While they weren't the next thing I made, this flavor was the next krispie treat I made to share with Rachel and John. Chocolate krispies make the base, plus chunks of graham cracker, mini marshmallow bits and milk chocolate chips to round out all the flavor. Stuck together with some classic marshmallow gooey-ness and yes, this is the s'more krispie I've been waiting for. Right, Rach?

I've been wanting to make a s'more version of a krispies treat for a long time, but I really wasn't in love with any of the recipes I found. While there definitely is a place for using something like Golden Grahams as the cereal base, I had my heart set on a cocoa cereal version. And the ones using regular krispies just didn't sound like they captured the essence of a s'more. So I crafted my own version. I pulled together all the components of a s'more--graham, marshmallow and chocolate--and combined them with melted marshmallows for a crunchy, flavorful bar with a perfectly soft texture, exactly what you'd expect from a krispies treat. And I'm pretty sure I nailed it. A perfect no bake treat! National S'mores Day was last Sunday, but I see no reason we can't expand that to an entire week. Or month. Or maybe everyday.

S'mores Krispies Treats


Ingredients

4 cups chocolate crisp rice cereal
2 cups graham cracker chunks (about 7 full crackers)
1/3 cup vanilla marshmallow bits
1/3 cup chocolate marshmallow bits
1/3 cup milk chocolate chips
1/4 cup butter
10 ounces mini marshmallows

In a large bowl, combine cereal, graham crackers, both marshmallow bits and chocolate chips. Lightly grease a 9 x 13 inch pan and set aside.



In a medium sauce pan, melt butter over medium heat. Add marshmallows and melt, stirring occasionally. Once melted, immediately remove from heat.



Pour over cereal mixture and, working quickly, stir to evenly coat.


Transfer coated mixture to pan and press into an even layer.


Allow to cool completely before cutting into bars.

Makes 24 bars.

  1. This reminds me of the type of thing I used to have as a kid. It brings back some good memories of visiting my friends' houses as my mum always tried to make us eat healthily so this would have been off the menu at home!
