Homemade Easy Bake Oven Mixes


Did someone you know get an Easy Bake Oven from Santa? Or are you completely grossed out by how much the mixes cost to churn out goodies from the Easy Bake Oven? My niece Abi asked for more mixes for Christmas so I decided to stock her up with three different mixes, each good for several batches, and recipe cards explaining how to turn these homemade mixes into tasty cookies and cakes. I opted for chocolate chip cookie mix, chocolate cake and funfetti cake mixes, so Abi will have some variety. Since Abi is a frequent visitor to this blog, I had to wait until after she opened her gifts to post these recipes so as to not spoil the surprise. But now she'll have these recipes to replenish her supply after she's treated everyone to plenty of cake and cookies.

When my sister sent me Abi's Christmas list and I saw the mixes, I immediately knew I'd be whipping up homemade versions. So I took the internet and luckily found a great resource in Christi at Cookbooks 365 who put together these mixes for her own niece. I loved the variety that Christi used--both cake and cookie recipes. She also has some frosting recipes, but I opted out of the frostings because my sister makes a killer buttercream and I'm sure Abi would prefer that. I did make an adjustment to Christi's white cake mix, adding in sprinkles for a funfetti factor. After packaging each mix in an airtight container, I added a recipe card explaining how to use each mix in the Easy Bake Oven and packaged it up for a fun holiday gift. Can't wait to hear how Abi likes them!


Easy Bake Oven Chocolate Chip Cookies


Ingredients for cookie mix

1 1/2 cups quick cooking oats
3/4 cup flour
3/4 cup brown sugar, packed
1/4 teaspoon baking soda
1/2 cup shortening
1/2 cup mini chocolate chips

In a medium bowl, whisk together oats, flour, brown sugar and baking soda until combined.



Using a pastry cutter or two knives, cut in shortening until mixture is coarse and everything is distributed.


Stir in chocolate chips.


Transfer to an airtight container, store in a cool, dry pantry and use with 12 weeks.

Ingredients for cookies

1/2 cup cookie mix
2 teaspoons water
1 teaspoon butter (optional)

Combine ingredients in a small bowl and let sit for 5 minutes. Roll cookie dough into 1/2 inch balls. Place on ungreased Easy Bake Oven cookie sheet, slightly flatten and bake in Easy Bake Oven.

Makes 2 dozen cookies.

Easy Bake Oven Chocolate Cake


Ingredients for mix

1 1/2 cups flour
1 cup sugar
3 Tablespoons cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening

In a medium bowl, whisk together flour, sugar, cocoa powder, baking soda and salt.



Using a pastry cutter or two knives, cut in shortening until mixture is coarse and everything is distributed.


Transfer to an airtight container, store in a cool, dry pantry and use with 12 weeks.

Ingredients for cake

1/3 cup chocolate cake mix
4 teaspoons water

In a small bowl, combine cake mix and water to form a smooth batter. Transfer batter to a lightly greased Easy Bake cake pan. Bake in Easy Bake oven (or oven preheated to 375 degrees F for 12-13 minutes).

Easy Bake Oven Funfetti Cake


Ingredients for mix

1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening
1/2 cup rainbow sprinkles

In a medium bowl, whisk together flour, sugar, baking soda and salt.



Using a pastry cutter or two knives, cut in shortening until mixture is coarse and everything is distributed.


Stir in sprinkles.


Transfer to an airtight container, store in a cool, dry pantry and use with 12 weeks.

4 teaspoons water
