Funfetti Waffles


I wanted waffles and I wanted sprinkles. When such spirit overtakes you, the only thing left to do is figure out how to make a funfetti waffle and enjoy breakfast. Part of me was sad I didn't have any whipped cream to top these waffles, but that was fleeting since these fluffy breakfast treats definitely came through with cake batter flavor and pretty rainbow sprinkles throughout. A few simple adjustments to a basic waffle recipe and you've got a perfect celebratory breakfast. Yay!

Originally I thought I'd just make my standard Funfetti Pancake recipe but I woke up with a desire to shove my face full of waffles instead. And since Logan was still sleeping I took advantage and warmed up the waffle iron. I used the basic recipe on the box of baking mix and just adjusted it to get that delicious cake batter flavor and jazzed it up with rainbow sprinkles. Dave of course used maple syrup, but whipped cream or chocolate sauce (or both) would totally take this breakfast party to the next level. Hey, it's a celebration so go big or go home. Oh, what are we celebrating? Um, that the baby slept long enough for me to make these?

Funfetti Waffles


Ingredients

1 1/2 cups baking mix
1/2 cup yellow cake mix
1 1/3 cup milk
1 egg
2 Tablespoons oil
1 teaspoon vanilla extract (not pictured)
1/3 cup rainbow sprinkles

In a medium bowl, whisk together flour and cake mix.


Measure out milk and add egg, oil and vanilla. Whisk together to combine.


Pour milk into flour mixture and stir until just combined and all the flour is moistened, taking care not to overstir.


Fold in sprinkles.


Heat waffle iron to instructions and spray with cooking spray. Ladle batter onto waffle iron (about 1/3 to 1/2 a cup depending on the iron--I used an ice cream scoop).


Cook waffle until crisp.  Repeat with remaining batter.  (Note: To keep waffles warm while cooking all the batter, heat oven to 200 degrees F and place cooked waffles on a baking sheet in the oven until ready to serve.)


Serve with syrup or whipped cream and more sprinkles.


Makes 8-10 waffles.
